Iron Chef

Alright all you aspiring chefs, wives, or anyone who cooks, I need your expertise. I have quite a few ingredients in my house that I haven't really touched, mostly because I don't know what to make with them. I've listed a few of these items below-read through them.

Small White Beans, Black Beans, Red Kidney Beans. All of these beans are dry, by the way.
Mango Chutney (I used this once, but haven't touched it since. Ideas?)
Yellow Corn Meal (Something besides just plain cornbread)
Dry Ranch Dressing Packets

Please share your recipes and ideas with me!

I use the dry ranch packets to add flavor to my mashed potatoes. As for the other stuff I have no idea what to do with them....sorry!!

For the beans I would say chili. Just throw them all together, after they are cooked according to directions.

I like black beans over pasta served with sour cream, salsa, and peanuts.

As for the dry ranch dressing packets, I have a recipe for pasta salad that my girls adore. I think it's pretty good, too.

Tricolor Salad
Salad:
8 oz. tricolor fiori pasta
1 c. frozen peas, defrosted
1/2 c. shredded carrots
1 c. cheddar cheese, cubed
4 oz. smoked turkey, cubed

Dressing:
1/2 c. light mayonnaise
2 T. lowfat milk
2 T. ranch dressing and seasoning mix, such as Hidden Valley

1. Cook pasta according to package directions. Drain and rinse under cool water. Place in a large serving bowl. Add peas, carrots, cheese, and smoked turkey.
2. Mix the mayonnaise, milk, and dressing mix in a small bowl. Pour over the pasta mixture. Stir well to combine.

*If you get turkey from the supermarket deli, ask for 1/2 inch slices.

not really the season, but chili is my favorite thing to do with dried beans. you'll want to make sure you soak them overnight first however... I usually bring mine to a boil then let them soak until I throw it together in the crock poti n the morning. I use a 1 pound bag for a big batch of chili (feed 6-8). Try a whilte bean chicken chili... yum!

use the cornmeal for HOT Tamale Pie!

My family loves this dish and it's super easy.
Ground beef, diced tomatoes, Tomato Sauce, onions, olives, frozen corn, taco seasoning. Cook your beef, add onions and seasoning, in a casserole dish add the rest of the ingredients (I always add half a can of water with the tomatoe sauce.)
Mix your cornmeal according to the package directions, (omitt the sugar) and pour on top, top with grated cheese and bake @ 350 for 30-40 minutes.

Also... if you're making chili with your beans, try making cornbread in a pancake style. I omit the sugar and fry in olive oil just like a pancake. Cut into triangles and they're perfect for dipping in Chili.

I usually mix the ranch w/ sour cream and use it as a dip for veggies or chips (lowfat sour cream won't kill your diet as bad).

my kids like hush puppies...make the cornbread, and deep fry the batter in finger size pieces..
